La Petite Maison's Drink – A Recipe

WThis is an easy version of a drink from a new menu. It's a party-sized prepared mix that is loaded with the essence associated with holiday season, which makes it ideal for hosting a festive gathering. Save the extra citrus syrup you can use for brunch beverages, puddings, or to mix additional servings of bikinis.

The Bikini Cocktail

Yields 10 guests

Ingredients for the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Method

For the Cordial: Place the listed components into a pot, heat until it reaches a light boil, agitating so the sugar melts. Then, turn off the heat and leave to cool fully. Decant into an sealable bottle, cap it and refrigerate it chilled, it can be stored for about one month.

To make Batch Mix: Mix all the liquids into a sizeable container, leave to sit for an hour, then strain , ideally through muslin, making it completely strained.

To serve: Add 85ml of the premix into a cocktail shaker containing ice, gently stirring carefully for about 60 seconds until cold. Strain to a cold coupe glass or equivalent, top with the cranberries and complete it with a brief mist of mandarin oil over the drink.
